Recipe : Chicken with Dijon Lime Sauce

Chicken With Dijon Lime Sauce

Indredients
4 thin sliced chicken cutlets
3 tablespoons dijon mustard
1 clove minced garlic
Salt (to taste)
Pepper (to taste)
1 Lime (juice and zest)
1 tablespoon light mayonnaise
1 teaspoon parsley

Directions
Preheat oven to 375 degrees
Mix - mustard, garlic, salt, pepper, mayo, lime juice and zest, parsley
Dip - each piece of chicken fully into sauce and place on foil lined baking sheet
Cook - 7 minutes then turn each piece and cook 7 minutes longer

Makes 2 Servings, 240 calories per serving

Suggested Side Dishes: brown rice, cranberry & walnut salad, mushroom risotto, mashed sweet potato
